The Island King's Beef Stew

Saturday night the Island King made the best beef stew we've ever eaten. It was really hearty and warm and it was pretty easy to make as well.

I'm sharing the recipe but I need to warn you that this recipe is not heart or waistline friendly LOL It does taste good though!


The Island King's Beef Stew
1/4 Cup Flour
1 Teaspoon Salt
½ Teaspoon Pepper
1 Teaspoon Garlic Powder
1 Pound Bacon
1 Pound Stew Meat, cut into 1" chunks
2 Carrots, cut into chunks
1 Yellow Squash, thinly sliced
2 Onions, cut into strips
4 Red Potatoes, quartered
1 Clove Garlic, finely chopped
2 Cans Stewed Tomatoes
3 Chicken Bouillon Cubes
1 Cup Water
2 Tablespoons Cooking Oil

Fry 1 pound of bacon in a large Dutch oven. Remove bacon and leave bacon grease in the pot. We didn't use any of the bacon in the stew but I'm sure it would be good if you wanted to add some. You could also use any bacon grease you already have instead of frying new.

Mix flour, salt, pepper and garlic powder in a ziplock bag and shake to mix. Add stew meat to bag and shake until meat is completely coated.

Heat bacon grease on medium high and add stew meat. Brown meat. Use tongs to turn meat while browning - do not stir. Add a little cooking oil as needed to keep meat from burning and pan moist.

Add stewed tomatoes, juice and all. Add vegetables, garlic, bouillon cubes and 1 Cup water.

Bring to a gentle boil, stirring often. Reduce heat to a slow simmer, cover and cook for 1 ½ hours or until meat and veggies are tender. Stir often to keep rue from sticking to pot.

This was really good straight out of the pot and just as good warmed up the next day for lunch.
